
This is a dish that will definitely please your taste buds, this is the first dish I’ve made that has made me want to eat more quinoa. It is similar to a paella without the meat, and rice. The quinoa has a blended texture of rice and fine grains. Enjoy.
Ingredients:
1 cup quinoa
1 8oz block extra firm tofu (read tofu prep instructions)
2 stalks of celery finely chopped
1 medium sized carrot finely diced
1 onion finely diced
1 medium sized apple peeled and cut into half in cubes.
1 Garlic clove minced
1/2 tsp salt
1 3/4 cups of water
1/2 tsp ground coriander
1/2 tsp onion powder
salt and pepper to taste
Prepare the tofu using my recipe in the link below then continue with the directions.
Tofu Marinate and special instructions
Now that the tofu is ready set aside and soak the quinoa in water for 20 minutes.
- Heat 1-2 tbsp olive oil on low in a large wok, and fry garlic, celery, and carrots for 5 minutes
- Add the ground corriander and onion powder stir well and fry for 1 minute.
- Add apple and fry another five minutes
- Add the drained quinoa and stir until coated with spices
- Add 1 3/4 cup water, and salt, then bring to a boil, cover and cook 15 minutes on low.
- Meanwhile, in a different pan fry the tofu cubes on medium in a 1/4 inch of olive oil, stirring and turning, until browned
- Stir tofu and parsley into the quinoa and vegetable mixture.
- Heat on low for another few minutes, season with salt and pepper to taste and serve.
