Cmac’s Gourmet Mac & Cheese almost from scratch

I decided to taste test my home made Gouda at day 20 instead of waiting till day 25 and it was amazing. The Gouda was a bit more curdy like cheddar (I think from not pressing it enough) and slightly saltier than normal Gouda, but it still knocked my socks off. As I said in the past I started making the Gouda for a trial run of the upcoming Mac & Cheese from scratch challenge some time next year, so I made Mac & Cheese almost from scratch with the cheese. This is a culmination of a few other recipes I found with some of my own special additions. My wife gave it two thumbs up, and you could call her quite a Mac & Cheese Connoisseur so I would definitely call this a passable recipe. As with most of my recipes the ingredients are just a guideline you can substitute and play around as you like, after all this is the Test Kitchen. Home made Gouda
Making hard cheese at home can be quite a lot of work but in the end not only do you get a great cheese, you get the satisfaction that you just made it from scratch. I will be eating this cheese after the 25 day aging period to see how it turned out. If its good I will be making another block and aging it longer then smoking it for the Macaroni & Cheese from scratch challenge in the works.
So for now here is the recipe I used and photos of the steps I’ve taken so far, the finished product will be revealed in 23 days from today.
Make your own Ricotta
Ricotta cheese is an easy to make subtle tasting soft cheese that goes great in lasagna, or stuffed shells. It can even be used in many desert dishes. Once I found out how easy it was to make there is no turning back for me. Not only is it cost efficient, the flavor and texture far surpasses any store brand I’ve had in the past.
My next big project will be coming up with some vegan cheese substitutes while on my journey to go completely vegan.

Making homemade yogurt is really a simple process. The savings, texture, and flavor will make you wonder what took you so long to make it yourself.
I originally jumped into making yogurt when I was trying to make high calorie foods for my daughter who has a severe gag reflex and growth issues. These days companies are going to fat free yogurt, or using milk powder and thickeners to speed up the process. I didn’t want anything to do with this so I did my research and started making my own.
