Cmac’s Easy breezy vegan Jamaican patties.
Posted by Cmac in Appetizers, Food, Main Course, TVP on May 6, 2010
……In my early teens I used to fill my lunch time hunger pains with the local 7-elevens greasy hot Jamaican beef patties, but eventually I grew out of that and moved on to greater things like being an adult and eating healthier. Anyways enough of my childhood memories, the other day I suddenly had a craving, yes it was for those greasy beef patties. In need of a new creation for the blog I decided to Veganize a recipe I found for them. This is a very easy recipe and of course extremely tasty, you can play around with the spices to make it hotter or milder, although the posted recipe is for, I’d have to say a mild to medium burn. Enjoy the recipe, and feel free to share your comments or suggestions.
Easy Vegetarian Enchilada’s
Ok, so I am guilty of Blog neglect. Not just because I have not had much time to blog but in fact I have had even less time to cook and create. After a big move to California, a 2 month stay in temporary housing, then another move to our permanent housing I have found
myself swamped beyond control. Between getting services for my daughter, and of course settling I have barely found the time to shave. I now can catch my breath a little and its time to get back to blogging, it will be slow but sooner or later I will be back on the blog track. Anyways here is a recipe part my idea, part Emeril’s recipe, as I have time I will play more with this recipe to make it more of my own, but in the meantime its quick, great, and this is the second time I’ve made it only to be left wanting more. As for the picture I was unsuccessful at getting a good shot before it was all gone instead I am providing a nice picture I took of a flower in my new backyard, gotta love those Winter flowers.
Spanish meatballs in a blanket with almond sauce
Posted by Cmac in Appetizers, Food, TVP on December 18, 2009
I saved the easiest hor douvres for last. This is my vegan tvp burger mix shaped into meatballs and fried, then wrapped with pillsbury crescent dough. The almond dip is what sets this recipe apart. Finally this recipe is looking for a name. So post a comment at the end of this suggesting your name idea and you might win 3 platters, and 2 coupons for pillsbury crescent rolls.
Enjoy.
Cmac’s Vegan Tourtiére
Posted by Cmac in Food, Main Course, TVP on November 6, 2009
It all started with a plan to make a vegan shepherds pie, and ended with a vegan tourtiére. I haven’t made tourtiére’s since I was a hardcore carnivore the traditional meat pie is as it sounds, ground pork, ground veal, ground beef, and a little bit of veggie. Tourtiére is a traditional french Canadian dish especially served around Christmas.
There is a lot of history behind the Tourtiére being that it was originally made around 1611 with the now extinct Passenger Pigeon (tourte in french). Now there are many varieties depending on the family, region, and supply of ingredients, and some of the french coastal families even make it using fish rather then ground meat.
Anyways enough history the point is I wanted to make a Tortiére and wanted to make it vegan, happily I was successful and it turned out to be the best Vegan meat pie I’ve every made.
Now onto the Recipe.
Homemade Vegan Burgers that won’t let you down!
I’ve said it before but I think I’ve finally gotten my veggie burger recipe perfected. This burger is easy to make without any real advance preparation. It can be grilled on the BBQ or fried in a pan. This burger actually reminds me of my favorite store bought veggie burgers only these ones cost about $1.00 to make 8 compared to $4.00 for 4. The blend of TVP, quick oats, and vital wheat gluten give this burger a little chew, with a nice crispiness on the outside. Finally the mild seasoning is just enough to give you the real burger taste. I have underlined the most important ingredients the rest can be played with to your liking.
