Make your own Ricotta
Ricotta cheese is an easy to make subtle tasting soft cheese that goes great in lasagna, or stuffed shells. It can even be used in many desert dishes. Once I found out how easy it was to make there is no turning back for me. Not only is it cost efficient, the flavor and texture far surpasses any store brand I’ve had in the past.
My next big project will be coming up with some vegan cheese substitutes while on my journey to go completely vegan.
Tofu from scratch
Making your own tofu is not only pretty easy but its cost comparison to store bought tofu is unbeatable. Another great reason to make your own is fresh tofu has a better texture and flavor then the store bought that has been packed in water and preservatives. I have been making my own tofu for about a year now and only buy commercial brands when I don’t have the time or energy to make my own. One of the hardest parts of making your own tofu is finding good soybeans and coagulants. I have included links to places where you can find these if there not available in your local supermarket. This batch of Tofu is being made for the BLT from scratch challenge, after pressing the blocks I will be marinating them whole and smoking them with hickory wood chips, then slicing and frying like bacon.

Making homemade yogurt is really a simple process. The savings, texture, and flavor will make you wonder what took you so long to make it yourself.
I originally jumped into making yogurt when I was trying to make high calorie foods for my daughter who has a severe gag reflex and growth issues. These days companies are going to fat free yogurt, or using milk powder and thickeners to speed up the process. I didn’t want anything to do with this so I did my research and started making my own.
