Apricot, caremilized walnut, romaine salad with a zesty vinaigrette.

Mouth watering, tummy filling, and absolute yum yum; what more can you ask for in a salad. This is a creation my wife came up with, keeping the theme of eating healthy and barely or completely uncooked meals on the weekend. As usual all the ingredients are approximate and there’s plenty of room for adjustments. I served this salad with a side of simple multi-grain thin pasta boiled, then fried with 4 cloves fresh garlic, some sea salt, olive oil, and juice of one lemon.  The salad would have done just fine without the side as it was very hearty.

At last the BLT from Scratch

Ive been working on this BLT since July 10th 2009 when I first stumbled upon Micheal Ruhlman’s Challenge. Technically I’ve been working on it since I started my tomato seedlings back in may. Throughout the process I have been burdened by failed sourdough starters, unsuccessful bread experiments, and a horrible growing season.  Finally with the extended deadline approaching I had a perfect lively sourdough starter, red tomatoes (2 to be exact), and some lettuce to make my BLT. I decided to challenge the challenge by making a completely Vegan BLT, you might want to call it a TBLT because the main ingredient is my Tofu Bacon. And in order to hopefully woo the judges into comparing a vegan BLT with one containing real bacon (which is something I have, and most vegetarians I know have missed since going vegetarian) I decided to use a wild yeast starter for the bread. Last but not least I decided to take it up one more notch and experimented with a Pita recipe I found, by turning it into a sourdough Pita and grilling it on the BBQ.

vegan_circleBacon from tofu, is it real? Can you actually turn a spongy block of pressed soy bean curd into the yummy crispy and greasy thing we all know as bacon. Now you can, this technique is quick, cheap, and easy. With the combination of a couple of other ideas and some time spent in the spice rack I don’t think I can improve this recipe anymore. Goes great on a BLT or can be crushed as a topping for salad. Maybe you can try it with a tofu scramble or even eggs (if your not vegan).
