Ricotta cheese is an easy to make subtle tasting soft cheese that goes great in lasagna, or stuffed shells. It can even be used in many desert dishes. Once I found out how easy it was to make there is no turning back for me. Not only is it cost efficient, the flavor and texture far surpasses any store brand I’ve had in the past.

My next big project will be coming up with some vegan cheese substitutes while on my journey to go completely vegan.
